Country Skillet Recipe

One of my favorite breakfast meals when I go to Denny’s restaurant is their Country Skillet (aka Supreme Sizzln Skillet). So, I figured I try to make it at home, so here is my version of the Country Skillet Recipe.

Preparation

Below are the tools you’ll need:

  • Cutting board
  • Kitchen knife
  • Bowls
  • Large frying pans
  • Spatulas
  • Deep fryer (optional)

Below are the ingredients you could use, but you should use whatever ingredients you prefer. I try to purchase organic when possible. Note, quantities I use are to feed a family of five (2 adults and 3 children).

  • 4-6 potatoes
  • 1-2 green bell peppers
  • 1-2 tomatoes
  • 6-12 cups of spinach (note it cooks down to a small amount)
  • 1/2 to 1 cup of chopped red onions
  • 2-4 cups of mushrooms
  • 4-6 eggs
  • 1 package of breakfast sausage (14 pieces)
  • 1-2 cups of mozzarella cheese
  • Olive oil
  • Sea salt and pepper

Step 1: Wash and cut veggies, scramble eggs

I like to cut the potatoes, onions, green bell peppers, tomatoes into small squares. I just cut the mushrooms into slices since they cook down. Scramble the eggs and add salt and pepper if you desire. Wash the spinach.

Step 2: Deep fry the potatoes

If you have a deep fryer, then deep fry the potatoes. It’s nice to have a deep fryer because the potatoes cook evenly and you don’t have to attend to them. Just drop them in the fryer, then pull out when brown. If you don’t have a deep fryer, then you’ll want to cook the potatoes with some oil in a frying pan until golden brown and put aside.

Step 3: Cook the sausage, eggs and veggies

I start cooking the the scrambled eggs in its own pan on low heat so they don’t cook too fast, I like my eggs moist. Then, I put the the breakfast sausages, green bell peppers and onions into their own frying pans with a little olive oil for the peppers and onions only. I cook these over medium heat. You’ll want to make sure the eggs and sausage are thoroughly cooked.

When the bell peppers are half cooked, I add the mushrooms to that pan and put a cover on the pan. I typically pull all four off the stove at the same time, then I cook the spinach in a pan with a little olive oil, spinach cooks very fast. You can add some salt and pepper to any of these items, but I typically don’t because my kids like to add salt before they start eating.

Step 4: Assemble the skillet (I like to use bowls)

After everything is cooked, you can make an assembly line so each person can put the ingredients they like into a bowl or on a plate. I typically put the potatoes on the bottom, then veggies and eggs, then cheese. Then, I’ll put the bowl in the microwave for 30 seconds to melt the cheese, then throw on breakfast sausage chunks on top.
